Vegetable stew with Pasta

Soupy, spicy, starchy stew!!! Oh the thought of it makes me drool :D

Stew is the first thing that comes to my mind when I wish for a hearty dinner. There is nothing much to do other than sit and cut a whole lot of Veggies. Also, you don't have to choose and pick vegetables, so just throw in all that you find fresh in your fridge!!

Since we add the vegetable broth to stew, you get all the nutrients from the veggies and easy to digest. You can prepare and serve the stew with or without pasta. I add pasta since I don't have to prepare anything else to serve it with.

Ingredients
Pasta (Any) 1 Cup
Carrots chopped 2
Onion chopped 1
Capsicum red/green chopped 1
Mushrooms  chopped 5
Green beans chopped 10
Potato chopped 1
Parsnip/radish chopped 1
Garlic cloves 4
Any lentil/dal 2 tbsps
Water 5-6 cups
salt  to taste
pepper powder  1 tsp
Green chillies(Optional) 3
Coriander leaves chopped 1/4 cup

To Temper
Oil 2 tsp
Star anise 1

Chop all the veggies, boil a pot of 5 cups of water and add the veggies (except onion), green chillies and lentils and 2 cloves of garlic.

Cook till the lentils and vegetables are tender and soft and keep it aside. (Don't drain the cooked water)

In a different pot, add oil and wait till it is hot. add star anise, rest of the garlic and onion and fry till the onion looks transparent.

Add the boiled veggies with the broth and bring it to boil. Simmer the flame, add pasta, salt, pepper powder and cook for 7-8 minutes or till the pasta is cooked.

Garnish with chopped coriander leaves and enjoy this scrumptious super meal with family and friends.


  • You can cook pasta separately and add it to the serving bowl later. You can also skip the pasta and enjoy the stew with bread or noodles.
  • You can also add green peas, Cooked kidney beans, soya chunks and any other vegetables and also can skip any of the veggies I have given in my recipe.
  • You can also add cooked/fried chicken if you want a chicken stew.
  • I have added start anise for a nice spicy aroma but you can skip it if you want.
